Healthy Instant Pudding

1236939_10153239841510447_226781091_nHere is a delicious and healthy dessert that you can whip up in 5 minutes flat, no kidding! This recipe is fast, easy, and foolproof  I would say anyone can pull it off .

I’m not the biggest fan of  “faux food” and often find that recipes that try to turn not so good for you dessert  into health food  fail to produce a tasty result. My kids nearly banned me from these experiments after the beet brownie incident (normally I would put a link, but nobody deserves that!).

There is however a take on chocolate pudding that I have been dying to play with, and with the kids out of the house for the day the kitchen was mine. I must admit not only is it delicious but also one of the richest chocolate puddings I have ever tasted and no one could tell there was green stuff in it.

  • 3 medium ripe avocados
  • 1/3 cup of raw local Honey
  • 1/4 cup raw coco powder
  • 1 tsp cinnamon
  • dash of vanilla
  • pinch of seasalt
  • 3 Tbs coconut oil

 

Peel and pit the avocados and place all of the ingredients in a food processor. Blend on medium until smooth scraping the sides as needed. You can adjust the sweetness to taste, I like the coco to really shine through. Scoop into cups and serve garnished with fresh raspberries, mint leaves candied orange peels or a small scoop of whipped coconut cream or if you want to keep it simple, serve it nude.

Seriously, it’s that easy. The pudding can probably be made in a blender, you just have to make sure that the avocados are nicely puréed or else your pudding will come out lumpy and everyone will be able to tell that you made them eat avocados.
